Eb Persian: Notes and Fingering
On paper the Eb Persian scale looks heavy: Eb, Fb, G, Ab, Bbb, Cb and D. Bbb is A, Fb is E and Cb is B, so the notation is more awkward than the sound.
The root lies on the 11th fret of the low E string and the 6th fret of the A string. If the double flat bothers you, D# Persian has the same pitches with a different spelling.

Structure
Eb persian scale notes:
How the persian scale is built:
The persian scale is built from the degrees 1 b2 3 4 b5 b6 7, which gives the step pattern H-W+H-H-H-W-W+H-H (W = whole step, H = half step).
Counting in semitones from the root: 0, 1, 4, 5, 6, 8, 11. That makes it a 7-note scale.
